Fresh apple juice
2 slices fresh ginger
½ stem of lemongrass
3 drops fresh lime juice
In a shaker, put the Somerset Cider Brandy with fresh ginger and lemongrass and muddle all. Add the Morello Cherry Liqueur, fresh apple juice and a few drops of lime juice. Shake, strain and pour.

60ml water
3 cloves
Cinnamon stick
1cm piece of ginger peeled and sliced
1 strip of lemon peel
60ml Somerset Cider Brandy
2 tsp honey
1-2 tsp lemon juice
Grating of nutmeg

Put the water in a small pan along with the spices and peel over a low heat. Bring to a gentle simmer. Meanwhile, rinse a heatproof glass with hot water and dry. Pour the brandy into your warmed glass, then pour over hot water and spices. Stir in the honey and lemon juice and taste for sweetness. Top with a little nutmeg, and breathe in deeply.

2 Bramley apples, peeled and chopped
3tbsp caster sugar or more depending on the apples
4 or 8 good measures of Somerset cider brandy
The juice of 2 lemons
1 egg white
Ice cubes
Bring apples, sugar and a cup of water to the boil and cook on low for 6-7 minutes. Sieve pushing some of the apple through. The syrup should be quite sweet but still taste of apple.
Add cider brandy to a cocktail shaker with 8 tablespoons of apple syrup the lemon juice and egg white. Half fill with ice and shake well. Strain into glasses with ice and a straw.

Somerset Old Fashioned

Old fashions date back to 1892 and are still popular today. They are combination of spirit, sugars and bitters.

In an old-fashioned glass, stir together a teaspoon of maple syrup with a few good dashes of Angostura bitters. Add ice, and then 60–80ml Somerset Cider brandy. Garnish with a wedge of orange or a wedge of green apple. If the latter, make sure you souse it briefly in lemon juice to stop it discolouring.
